  2. Make ready 1 small cauliflower florets

  7. Make ready 1 tsp ginger paste
  8. Get 1 tsp garlic paste
  9. Get 1/4 cup chopped coriander leaves

  11. Prepare 8-10 green chillies
  12. Get 1/2 cup oil
  13. Prepare 2 tsp ghee
  14. Prepare 1 tbsp kasuri methi
  15. Make ready 1/4 cup curd
  16. Make ready 2 tsp cream or malai
  17. Prepare 1/4 cup milk
  18. Prepare few threads of saffron
  19. Prepare 2 tsp kewra water
  20. Make ready 1 tsp red chilli powder
  21. Take 1 tsp biryani masala
  22. Make ready 3 tsp salt or per as taste
  23. Get 1 bay leaf,1green cardamom 2cloves,4-5 pepper corns
  24. Take 1 tsp cumin seeds
  25. Make ready For potli masala
  26. Make ready 1 bay leaf
  27. Take 4 4cloves
  28. Take 2 green cardamoms
  29. Get 1 mace
  30. Make ready 1 tsp cumin seeds
  31. Prepare 1 tsp fennel seeds
  32. Prepare 5-6 garlic cloves
  33. Prepare 1 inch ginger crushed
Steps to make Veg Biryani:
  1. First, wash and socked the rice for a half-hour. Take cauliflower florets and parboil in salt and turmeric water.
  2. In a kadhai add oil heat it then add sliced onion and fry on medium flame until they turn golden brown. Transfer them into the plate. Soak the saffron in warm milk keep aside
  3. Take a piece of muslin cloth add above potli masala and tied it. Take a wide mouth vessel add soaked rice then add potli, add 2tsp salt or as taste add broken 5-6 green chillies. Then let it boil and cooked until 80% done. Then strain it and keep aside
  4. In the same kadhai add chopped carrot fry them in remaining oil for 2 minutes then add cauliflower florets, peas and capsicum. Fry all for 2-3 minutes. Then transfer them into a bowl.
  5. In the same oil add whole spices, saute few seconds then add ginger garlic paste, saute 1 minute then add red chilli powder and biryani masala.keep stiring and cook few seconds then add curd mix well and add fry veggies.mix them nicely. Now add few slit green chillies add kasuri methi and cream. Add 1tsp salt mix them and cook for 3-4 minutes.
  6. Now take a wide vessel or wok. Add halted veggies and make a layer then spread coriander leaves and mint leaves,add some fried onion and make a layer of rice. Spread half quantity of saffron milk and half kewra water, then again make a layer of veggies then add coriander and mint leaves, add fried onion and repeat the same and make a layer, add kewra and ghee. Cover and cooked it on low flame for 5-7 minutes.
  7. Turn off the flame and open the biryani after 10 minutes.veg layered biryani is ready.enjoy it
