  6. Make ready half tsp Turmeric powder
  7. Take 1 tbsp Coriander powder
  8. Make ready 1 tsp Cumin seeds
  9. Get to taste Salt
  10. Get Oil for frying
  11. Make ready 3-4 Green chillies
  12. Get 5 to 6 Curry leaves

Steps to make Karelay Pyaz:
  1. Deseeded & Slice Karelay and add some salt on it. And leave it for half and hour.
  2. Now wash it thoroughly and keep it in a strainer so all the excess water will be strained.
  3. Now deep fry these until they becomes Crispy.
  4. Now take 4 sliced onions and deep fry them until they becomes golden.
  5. In another pot take 1 sliced onion and 2 to 3 tbsp of oil and fry it till golden brown.
  6. Now put cumin seeds and curry leaved in it, saute for 1 min.
  7. Now add ginger garlic paste and fry until you can smell it's aroma.
  8. Now add tomatoes along with red chilli powder, turmeric powder, coriander powder and salt, mix it well and cover the lid. Let tomatoes becomes tender.
  9. Now bhunofy it until it's water dries up and oil seperated.
  10. Now add fried onions and again bhunofy it.
  11. In last add fried bitter gourd in give it a quick stir and add green chillies.
  12. Cover the lid and let it sit for 5 mins. & Now it's ready to serve with garma garam Chapati or Naan.
