In a small bowl, combine the flour and almonds; cut in butter until crumbly. Wrap foil tightly all around the outside of the tin to make it watertight. Then pack the graham cracker mixture in the bottom of the springform pan. Cheesecake can be frozen whole or cut up into slices.

- Preheat oven to 160C. Line a 20cm cake tin with baking paper.
- Mix the pistachios and olive oil. And spread into the lined tin: this is the βcrustβ.
- Bake for 7-8 mins. The pistachios will just be turning fragrant. Leave to cool.
- Put the berries and lemon juice in a shallow pan. Heat on medium-low. Mash the berries with a fork. Heat until they start to simmer.
- In a bowl, beat the yogurt and cheese. Add the lemon zest and salt and fold through.
- Add the berries (when cool) to the yogurt mix. Fold gently.
- Layer the berry/ yogurt mix onto the pistachio crust. Put in the freezer for an hour or two so itβs set. Itβs a good idea to cut it into slices when itβs just set…
- Thatβs it! The cheesecake will be ok kept in the freezer for a few days. Enjoy with some berries, extra lemon zest and/ or fresh mint π
