The ingredients needed to make Milk Pap (kunun Madara):
- Take Milk powder
- Take Plombs
- Get Corn flour
- Prepare Coconut milk
- Get Dessicated coconut
- Prepare Fresh grated coconut
- Get Vanilla flavor powder
- Take Sugar
This is another form of pap mostly made in the northern part of Nigeria. It is made using Gero also known as "Pearl Millet", dried ginger, cloves and tamarind which is called "Tsamiya" in Hausa. The first milk strained would be thick. Place the chaff back into the blender , add some more water, blend & strain again till the whole milk is extracted.
Instructions to make Milk Pap (kunun Madara):
- Put pot of water on fire(depend on the quantity you want)
- When the water hot (not boil) add the plombs and cover to boil for few minutes
- When the plombs is cooked, add use wooden spoon to stir the liquid gently as you add the milk powder till finish
- Immediately, pour in the Dessicated coconut and the fresh grated coconut into the liquid stir
- Pour the coconut milk and the vanilla flavor then stir
- Pour the corn flour in a bowl and mix with little water (like batter) and stir into the pot of liquid (it shouldn't be too thick cos when it out of heat it becomes very thick)
- Turn of the heat and allow for some minute before adding the sugar to taste.
- Serve and enjoy
The first milk strained would be thick. Place the chaff back into the blender , add some more water, blend & strain again till the whole milk is extracted. The subsequent milk strained would be lighter than the first. It's always better not to make the kunun aya too light. Tigernut Milk which is known as kunun Aya, is of a northern Nigeria origin.
