To make the meringues: In a mixing bowl, beat the egg whites until soft peaks. A floating island is a dessert consisting of meringue floating on crème anglaise (a vanilla custard). The meringue is prepared from whipped egg whites, sugar, and vanilla extract and baked in a bain-marie. The crème anglaise is prepared with the egg yolks, vanilla, and hot milk, briefly cooked.

Instructions to make Floating Island:
  1. Boil 1 and 1/2 cup of the milk in a pan.
  2. Separate egg whites and yolk. Beat only the egg whites by adding a pinch of salt (or lemon juice). once soft peeks are formed, add 2 tbsp sugar and beat till stiff peaks form.
  3. Using 2 spoons, scoop out the egg white and put it on the milk. Simmer the heat, Poach the meringues for only about 30 seconds by flipping on both sides carefully. (poaching for longer time results in flat meringues). Refrigerate the prepared meringues.
  4. Now, whisk the yolks with 1/2 cup milk by adding 2 tbsp sugar and vanilla essence to it. Add this mixture to the simmering milk. Also add the condensed milk and stir occasionally
  5. Once the custard has thickened, remove from flame and Refrigerate
  6. For Caramel candy, add sugar to a pan and add 1 tbsp water and boil till the sugar caramelize. Pour this on a baking sheet in thin lines using a spoon. After it has dried and become crisp, break into pieces
  7. To serve, pour custart sauce on serving plate, place above some meringues topped with caramel candy. (crushed candy pieces can also be sprinkled over the custard sauce)
