In this recipe I have used vegetables instead. My favourite recipe is a traditional Somali one-pot rice and goat meat dish, locally known as " iskukaris ". I am not a fan of the fatty goat meat, so I replace it with fresh tuna. It ends up being a bit similar to the paella, but cooked in a deep pan and with only one meat ingredient.

Instructions to make Somali rice (isku-karis):
  1. Cut all the vegetables into a blender and put half a cup of water (add more if needed) and blend
  2. In a big pot put 3/4 cup oil and the meat that is cut. Add salt and seasoning.
  3. Put in the blended vegetables and stir. Let it sit for about 30 minutes and stir when needed.
  4. Boil 2.5 litres of water. Wash the rice and set it aside.
  5. In the pot with the meat check to see if the water is leaving and oil is shown. Then put the rice inside and stir.
  6. Then put the boiled water and stir. Cook it till it is soft and small liquid remains.
  7. Then put aluminum on top and cook in the oven for 20 minutes.
