Gujiya, or Karanji, are fried Indian Dessert Empanadas filled with a sweet mix of Khoya/Mawa (milk fudge), dry fruits, coconut and cardamom, made during Holi and Diwali. The basic ingredients used to make this sweet include mawa/khoya, sugar, dry fruits, maida and pure ghee. This delicacy is prepared by making a stiff dough of maida and then it is divided into. Steps to make Fruity Gujiya in Rich Milk Sauce:
- Take a big plate add 1/2 cup maida, 1/2 cup rava,salt, orange crush, 1 tbs ghee, mix well, and make medium soft dough by adding water little by little. Cover it, and Keep in rest for 15 min.
- In a pan add butter, add chopped apple, pears, saute then for a second, then add chopped dates, sapota and strawberry, mix well then add brown sugar, and cinnamon powder, and grated coconut, mix well and cook it till all fruits get soggy. Keep them aside for cool.
- In another pan take 1 cup sugar and 1/4 cup water and make, 2 string syrup. Keep this aside.
- For makeing gujiya take a little portion of dough, and make a small round ball,dust some flour on work top, roll it out to a thin sheet. Depending on the size of the sheet, put a few portions of mix fruits filling on the sheet and fold it to cover fruits filling. Now, grease the all corners with milk, press the corners with fingers to make packets of fruits mix, then cut them separate. Take a fork and seal the corners of each packet (gujiya).
- Make all the gujiya in same way and keep in freezer for 5 min.
- Now in a kadai heat ghee for deep frying, add gujiya one by one and fry then till light golden brown in colour.
- For making making rich milk sauce -take a sauce pan add milk and sugar take a boil, now take small bowl add 2 tbs custard powder (vanilla flavor) 4 tbs water dissolve well, add this custard mixture into milk, mix well, now add crumble kalakand, mix well, cook this mixture till it become little thick. Keep this mixture aside for cool, and keep it in refrigerator for 2 hr to chilled,
- For serving take out chilled milk sauce, add some chopped fruits like strawberry, pears, pomegranate orange on it.
- Now dip fried gujiya in sugar syrup make sure syrup properly stick on gujiya. Take out gujiya from syrup and put in the fruity milk sauce, sprinkle chopped dry fruits on it.
- Serve immediately.
