- Heat some oil in a wok and fry the pieces and keep them aside.
- Add cumin seeds and asafoetida in the same oil and let the seeds crackle.
- Blend the tomatoes and ginger in a blender till a paste is formed. Add this tomato paste to the wok.
- Add all the dry spices and salt and mix them well and cook till oil separates.
- Add the lotus stem pieces and let them simmer for 3-4 minutes till they are coated well with the masala.
- You can add more water if you want, I liked it dry. Add garam masala and coriander leaves and switch off the gas.
- Serve hot as an accompaniment with roti or rice and dal.
