Although it is made out of bacon, it simply is a different experience than just chopping up bacon into batons or bits. A good lardon is crisp on the outside and tender on the inside which is hard to achieve with any kind of pre-sliced bacon.

- Add enough water to be about 2 inches above the macaroni
- Fry the bacon larden when they are cooked drain oil off them and towel dry them.
- Grate the cheese and set 9aside. Add the milk and 1 cup water in a saucepan
- Add the sauce pan to the heat heat up and add the grated cheese. Keep stirring until it comes to the boil then whisk it together next add the cheese mix whisk that in. It goes thick so you can add more milk to get it to how thick you like it.
- Drain the cooked macaroni and towel dry it add back to the saucepan then add the bacon lardens and cheese sauce stir gently to mix
- Add to serving plates and finish off with a little more sauce and bacon crips on top.
