- Take 1/4 cup all purpose flour

Cherry kernels contain benzaldehyde, the compound responsible for the dominant flavour in almond extract. A quick and classic cherry clafoutis, made the authentic French way with the pits still in the cherries. Should you wish to avoid the pits when enjoying this gorgeously simple dessert, you can remove them prior to baking. Clafoutis can be served warm or cool.
Steps to make Clafoutis:
- Heat oven to 190C.
- Grease a dish, then sprinkle half the sugar on the butter, turning the dish around to coat it in sugar.
- In a large bowl, whisk together the remaining sugar with the milk, cream, flour, eggs and egg yolk.
- Pour batter into the prepared dish, then sprinkle over the cherries.
- Carefully put the dish in the center of the oven, and bake for 40 - 60 minutes until risen and golden. (I had to finish mine under the grill/broiler)
- Dust with confectioner's/icing sugar. Serve warm.
Should you wish to avoid the pits when enjoying this gorgeously simple dessert, you can remove them prior to baking. Clafoutis can be served warm or cool. Remove the clafouti from the oven, and serve it in wedges, warm or at room temperature. A dab of whipped cream is entirely appropriate. This French dish might sound fancy, but a clafoutis ("cl-ahh-foo-tee") is a large, puffy pancake with a custardy texture and crisp edges that is baked in a buttered skillet or baking dish.
