- Get 50-100 g Desiccated coconut
Fifteens are a classic Northern Irish traybake, if not THE classic traybake. They are also a no-bake traybake and aren't made in a tray. I grew up in Northern Ireland and these no-bake treats were a staple in the cake section of any cafe, alongside British classics like the Millionaire's shortbread and flapjacks. It was only on leaving to come to England did I realise that they don't exist.
Instructions to make Fifteens:
- Crush or blitz the digestives and put in big bowl. Add condensed milk then marshmallows and either cherries or chocolate. Mix well to ensure all ingredients well mixed with the milk in particular.
- Lay out cling film and spread coconut all along the base. Lift mix from bowl and arrange in a sausage-like shape. Pat your mixture into shape and coat sides and top with more coconut. Wrap cling film around tightly and tie at both ends. Allow to chill in fridge for few hours. Then unwrap and cut into (roughly) fifteen treats.
