Instructions to make Fattoush Salad, middle easten pitta Salad. π:
- Pre-heat the oven to 180Β°C slice the pitta in half making 2 rounds of pitta bread. Place the pittas on a non stick pan or add parchment paper. Brush with 2 ttbls olive oil. Season with salt n pepper.
- Bake the outside down until browned take out and leave to go crispy. Bake for 5 minuteson medium heat
- Dice the Romain hearts lettuce and rinse and drain and add to a salad bowl
- With a spoon take out the seeds from the cucumber cut in half right down the length With a spoon take out the seeds right down the mmiddle then dice the cucumber add them to salad bowl
- Cut the cherry tomatoes in half and add them. Mince the scallions and have them.
- Add the radishes bell pepper and chopped parsley and toss to combine.
- In a bowl add the remaining olive oil, lemon juice,garlic, white wine vinegar, sumac, all spice salt and pepper and whisk to combine. Pour the mix all over the salad. Add the crisp pitta bread broken up and add to the salad and toss to combine. Enjoy!
