- Prepare 300 g sausages
- Get Enough potatoes
- Prepare Tin cannellini beans

- Make ready Tablespoon passata sauce homemade or shop bought (see recipe)
- Get 2 bay leaves
- Prepare Salt and pepper to taste

- Chop sausages into bite size pieces. Peel and chop potatoes. Brown sausages in a pan, no oil needed, remove and set a side. In the same pan, add the soffritto mix, stirring to get any brown bits from the sausages too, extra flavour
- Now add stock, bay leaves and passata. Stir and add potatoes. Bring back to the boil and simmer for about 20-25 mins. Add sausages now and continue simmering for another 10 mins.
- Drain and rinse the beans and throw them in now. Season to taste and simmer for another 5 mins. Serve with fresh bread
