The ingredients needed to make Karela Pyaz:
  1. Make ready 1 kg Karela (Bitter gourd)
  2. Prepare 1 &1/2 tbspn Salt
  3. Get Cooking oil for frying
  4. Make ready 1/2 kg Onion sliced
  5. Take 1 tbspn Ginger & Garlic paste
  6. Prepare 2 tomatoes puree
  7. Get 3 Green chillies chopped
  8. Prepare 1 tbspn Cumin seeds
  9. Make ready 1 pinch black seeds
  10. Make ready 1/2 tsp salt or to taste
  11. Take 1 tsp Turmeric powder
  12. Prepare 2 tsp Coriander powder
  13. Take 2 tsp Red chilli powder or to taste
  14. Take 1 tsp garam masala powder
  15. Take 1/2 tbspn dried fenugreek leaves
  16. Make ready 1/2 tsp black pepper powder
  17. Prepare 1 tsp Sugar (optional)
  18. Take 2 tbspn yogurt
  19. Get Fresh coriander leaves for Garnish
Instructions to make Karela Pyaz:
  1. Peel & deseed bitter gourd then chop into small pieces with the help of the knife.
  2. On strainer,add bitter gourd,salt and mix well,cover and let it rest for 30 minutes then wash thoroughly 3-4 times and squeeze to remove excess water.
  3. In frying pan,heat cooking oil and add bitter gourd, half tsp turmeric powder and 1 tsp sugar fry bitter gourd until golden brown and crispy & set aside.(sugar mein is liye use krti hun karela ki karwahat kam ho jati hy)
  4. In remaining oil,add onion and fry until light golden.
  5. Add ginger&garlic paste,2 green chillies paste, tomatoes puree and mix well.
  6. Add black seeds,cumin seeds,red chili powder
  7. Fenugreek leaves, turmeric powder
  8. Coriander powder, Black pepper powder mix well
  9. Add salt and cook for 2-3 minutes.
  10. Cover and cook on low flame for 5 minutes then cook on high flame for 2-3 minutes.
  11. Now add fried bitter gourd and mix well.
  12. Add 1 chopped green chilli,garam masala powder, yogurt cover and cook on low flame for 15-20 minutes.
  13. Add fresh coriander,mix & serve!
